The Layered Cake Series: Part 2

In the world of Madison nothing is better the chocolate and peanut butter…well, unless it is   chocolate peanut butter cheesecake or chocolate cake!

Happy Birthday to Madison with her Peanut Butter Cup Chocolate Cake Cheesecake. 

That right, chocolate cake, peanut butter and cheesecake all in one!

This cake weighs about 8 lbs. One of the heaviest cakes that I have ever made. Why does it weigh so much?  It has 3 layers, one of which are dense cheesecakes filled with peanut butter cups, layered with chocolate ganache.  Sandwiched between the ganche layers are salty peanuts that provide the perfect contrast to the sweetness, and a light as air whipped chocolate peanut butter frosting covers the whole cake.  The cake is topped with peanut butter frosting and large peanut butter cups.

Here is my favourite peanut butter frosting recipe. Light, fluffy and sweet.

Peanut Butter Frosting and Garnish:

2/3 cup creamy peanut butter
8 tbsp butter, softened
1 cup confectioners’ sugar

Cream peanut butter and butter together in stand mixer with whisk attachment.  Gradually add powdered sugar.  Whip on high speed until light and fluffy
