In celebration of St. Patrick’s Day I whipped up two festive treats yesterday.
Starting with Gluten-Free Mint Swirl Chocolate Brownies. These were a basic gluten-free brownie batter swirled with a cream cheese mixture that was flavoured with mint extract and green dye. They were fluffy, moist and delicious!
I also made Chocolate cupcakes topped with Bailey’s Frosting. The cupcake was fluffy and the frosting was rich and sweet! They definitely added some fun to the night!
The chocolate cupcakes were topped with gold flakes.I think they’re pretty cute, and hellooo – chocolate and bailey’s!
This dessert was so well loved, it was gone in a snap! And since it’s so easy to whip up, I’ll be making a second batch very soon. Hope you enjoy it too!
Bailey’s Buttercream
1 cup butter , at room temperature
3 cups powdered sugar
6 Tablespoons Bailey’s Irish Cream
2 teaspoons vanilla extract
Place all ingredients in a large bowl. Use electric mixer to blend together; mix until smooth and creamy.
