The Chocolate Cupcake.

On this particular day I had made 4 dozen chocolate cupcakes for some students at EDSS. Chocolate cupcakes, cupcakes in general, are very versatile. They can be altered with different fillings, frosting and flavouring extracts.

Cranberry Upside Down Cake

Pineapple upside down cake has truly met its match!

Sweetened whipped cream or vanilla ice cream is the perfect accompaniment to this slightly spicy dessert. The topping is made by simply baking cranberries placed in a layer over sugar and spices at the bottom of the pan. As the cake bakes, the sugar caramelizes, forming a rich syrup.

Salted Caramel Chocolate Cake

This is my new favourite cake. I’m not usually a chocolate cake girl, but the combination of moist cake, rich caramel and course sea salt is delicious beyond words.

Bake two 9inch round pans of your favourite chocolate cake recipe. Layer with rich caramel (recipe below), cover with a simple chocolate buttercream and sprinkle with course sea salt.

Allow the cake to sit for a few hours before serving – resist the temptation! This allows the caramel to soak into the cake, giving you the most rich and moist cake that you’ve ever eaten.

I promise you, this cake is everything that a dessert should be. The perfect combination of sweet and salty.

Attention All Cheesecake Lovers

White Chocolate Peppermint Cheesecake

This past weekend my family got together with some family friends for a night of food and festivities. Needless to say I was in charge of dessert. I made my World Famous White Chocolate Peppermint Cheesecake…okay, so it’s not World Famous…well, it’s not famous at all but it is pretty tasty so maybe one day it will be!

A classic Golden Graham crust, creamy filling hinted with white chocolate and peppermint extract, topped with whipped cream and sprinkle with white chocolate shavings and candy cane. Perfection.

I love this cheesecake because it is light and fluffy and not overly ‘cheesy’ or sweet. It is also very versatile and I can change up the flavours however I like. Next time, I’ll do Dark Chocolate Raspberry or Kahlua Coffee.

This is my own personal recipe that has taken me a couple of times to perfect but I think I’ve finally got exactly what I want.

So if you’re interested, I’m sorry to say that this one is top secret. I am no going to share the recipe with you but…
